PUMPKIN: The fall harvest, along with Halloween, is the time of year when pumpkins are prevalent.
Pumpkin spice everything has been the trend the past few years, and popcorn.org is no exception. Pumpkin spice latte popcorn is one. Ingredients: 2 tablespoons vanilla sugar, 2 teaspoons espresso powder, 1 teaspoon pumpkin pie spice, 1/4 teaspoon sea salt, 8 cups popcorn, 2 tablespoons melted coconut oil.
Directions: In a small bowl, whisk together vanilla sugar, espresso powder, pumpkin pie spice and salt until blended. Place popcorn in a large bowl. Drizzle coconut oil over popcorn; toss until evenly coated. Sprinkle with vanilla sugar mixture until dusted evenly.
And without the latte, pumpkin spice popcorn. Ingredients: 8 cups of popped corn, 1/3 cup butter, 3 tablespoons sugar, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, Pinch of ground ginger.
Directions: Put popped corn into a large bowl. Melt butter and add sugar, cinnamon, nutmeg and ginger. Stir until sugar is dissolved. Drizzle over popcorn and toss until well coated.
This one has a lot of ingredients which might make for a special trip to the grocery store, for Cinnamon Maple Popcorn Crunch. Ingredients: 12 cups unsalted, unbuttered popped popcorn; coarsely chopped and unsalted, ⅓ cup each almonds, cashews, pecans; 1/2 cup butter; 1/2 cup coconut sugar; 1/2 cup maple syrup 1/4 cup brown rice syrup; 1 teaspoon salt; 1/2 teaspoon cinnamon
Directions: In a large mixing bowl, combine popcorn, almonds, cashews and pecans. In a saucepan, combine butter, sugar, maple syrup, brown rice syrup, 1/4 cup water, salt and cinnamon; bring to boil over medium heat, stirring occasionally. Cook until mixture reaches hard crack stage (295° Fahrenheit). Slowly pour syrup in a thin stream over popcorn mixture. Toss gently to coat evenly. Let cool; break into large chunks.
