MEAL PREP: The kids will be home for the holidays sooner than you know. We thought we would share a few kid-approved recipes from Feed Pennsylvania and PA Eats.
Energy Bites are easy to make and can be stored in an airtight container, refrigerated, for a week or in the freezer for up to a month.
To make these little snacks, you will need two cups of old fashioned oats, one tablespoon of honey, one cup of peanut butter, a half cup of dried cranberries and one teaspoon of cinnamon.
In a large mixing bowl, combine all the ingredients together. Stir until well combined. Next, roll into 10 to 12 balls with your hands, pressing tightly. Place balls into a sealed container and either the refrigerator or the freezer.
Another fun one for the kiddos is Fruit Soup. For this recipe, you will need a cup each of frozen strawberries, raspberries and blueberries; two bananas, sliced and frozen; one teaspoon of honey; two cups of milk, divided; and one teaspoon of cinnamon.
Combine all the fruit, then divide it between two serving bowls. Drizzle honey over fruit and pour a cup of milk in each bowl. Sprinkle the soup with cinnamon and enjoy.
The last one is a cold treat. But kids don’t care! Yogurt Pops only need two cups of fruit flavored yogurt, two cups of fresh or frozen berries, and six popsicle sticks. To make the pops, stir yogurt and berries together in a medium bowl. Pour into a popsicle mold or an ice cube tray. Insert sticks more than halfway, or toothpicks. Freeze for at least four hours. Warm water will help loosen the pops from the tray or mold.
