How about a quick and easy blueberry crisp for breakfast this weekend, here is the easiest recipe ever. You need two cups of fresh or frozen berries, a cup of rolled oats, one-quarter cup of brown sugar, and about three tablespoons of melted butter. Other optional ingredients include a pinch or two of cinnamon, nutmeg, or any other seasoning you wish, shredded coconut also adds a nice pep to this dish. In a medium bowl, combine all ingredients except the berries and stir. Then, in a microwave safe baking dish, spread the berries on the bottom then add the oat topping.
This crisp can be completed in the microwave on medium heat in five minutes. Of course, it can also go in the oven at 375 degrees for 35 minutes. You will know it is done when the berries are soft and the juices are bubbling.
For a local adventure: Red, White & Blueberries Farm features organically grown blueberries in a field of approximately various 2,600 blueberry plants, consisting of 32 different varieties of blueberries. If they follow suit with previous years, the fields will open to the public this weekend from 10 a.m. to 8 p.m. Saturday and 10 a.m. to 5 p.m. Sunday. The fields are located 1.5 miles up Harrisburg Run in Bradford.
