Home food preservation: Ever want to learn how to preserve your own foods at home but don’t know where to start? Penn State Extension recently put together a variety of webinars available to watch online for a small fee.
The first of these webinars, slated for 1 p.m. today, focuses on fermented pickles and sauerkraut. During this webinar, viewers will learn about the basics of water bath and atmospheric steam canning for processing fermented products, the important role acid plays in fermentation, use of optional ingredients, fermented pickles and sauerkraut.
The next webinar, slated for 1 p.m. on Aug. 6, will focus on tomatoes and salsa, covering the basics of steam canning for processing tomatoes and tomato products, latest canning recommendations, use of research tested recipes in canning salsa and other tomato products for safety and fruit salsas.
Next up is the jams and jellies webinar at 7 p.m on Aug. 16, which will cover the basics of steam canning, techniques for making cooked and freezer jam and jelly, various types of pectin products and their use for a proper set, essential nature of various ingredients to a quality product andhow to troubleshoot problems.
Last, but not least, is the webinar on freezing foods at 1 p.m. on Aug. 31, which will cover the basic principles behind freezing fruits, vegetables, herbs and meat to assure a safe product, various methods of freezing fruits, vegetables, herbs and meats, as well as pre-treatment steps, such as blanching and anti-darkening soaking solutions to ensure a quality product.
