RECIPES: Here at RTS, we get some great recipes to pass along to readers.
Every once in awhile, we’ll get one that we just can’t imagine making or eating. To our amazement, we were given a whole slew of these at once when Joyce Naughton gave us her copy of You & Peter Pan in the Kitchen, a cookbook from 1960 which was released by the peanut butter company.
We’re fans of peanut butter. However, we can’t imagine some of these uses for the tasty treat.
Peter Panburgers are made with ground beef mixed with peanut butter. We’re not sold on that one.
How about peanutty stuffed eggs? It’s hard-boiled eggs with the yolk mixed with peanut butter and mustard. Maybe not.
The one that gave us the most pause was a “power packed sandwich spread,” with tuna, relish, mayonnaise and peanut butter all mixed together.
Thinking we were being a bit judgmental, we checked with the guys in our sports department. These young men aren’t picky eaters, yet we couldn’t interest them in a recipe from this book until we got to the pancakes and desserts.
Here’s one we all agreed sounded palatable: Peanutty chocolate marshmallow parfait. What you need: ½ cup Peter Pan peanut butter, 2 cups milk, 1 package chocolate instant pudding mix, 1 cup miniature marshmallows. Measure the peanut butter into a bowl, slowly add milk and beat together. Add pudding mix and continue beating until well mixed. Let pudding stand to thicken slightly. Spoon into serving dishes, layering with miniature marshmallows. Chill.
Those same ingredients — without the marshmallows — and directions can be used for a peanutty pie. To make the crust, use ½ cup peanut butter, 2 tablespoons margarine and 1 ½ cups of graham cracker crumbs. Melt the margarine in a saucepan over low heat. Add in the peanut butter and blend with a fork. Mix in the cracker crumbs. Using a wooden spoon, press the mixture evenly into a pie pan. Refrigerate for about an hour, and fill with slightly thickened pudding mixture, and chill.
The book also has recipes for cookies, chewy bars and cupcakes — you know, things where peanut butter would be a welcome addition.
