SPICE UP MOVIE NIGHT: Pennsylvania has moved to the yellow phase, but we aren’t exactly ready to hit the movie theater and catch the newest releases. Entertainment outside the home is still in the (hopefully not TOO distant future), but for those who are sitting down to watch movies or another Netflix binge session, below are a few fun snacks that will spice up your at-home movie or tv show viewing.
Popcorn bar: Next time you go to the store, stock up on some sweet snacks like candy you might buy at the movie theater, nuts or raisins. Then, set out popcorn and various other options and let the family decide what to mix together. This popcorn bar is fun and easy for both setup and cleanup. If you’re going to snack, make it fun.
Feeling like it’s time for some culture? Try adding Greek Popcorn to tonight’s snack menu. Make some popcorn, toss it with cooking spray in a bowl. Then, add 1 teaspoon dried oregano, one half teaspoon each of lemon zest, salt and garlic powder and freshly ground black pepper. Finally, add 2 tablespoons of crumbled feta cheese and serve to the family in front of an appropriately themed movie.
Another option is to make Pepperoni Popcorn dippers. This one requires the oven. Preheat to 350 degrees. Use an 8-inch square baking pan. Whisk together two eggs, one-half cup Tomato and Basil Reduced Fat Cooking Creme, 1 tablespoon grated Parmesan cheese and one-eighth teaspoon coarse ground black pepper.
Next, stir in 10 cups popped popcorn, one cup of mozzarella cheese and one-third cup of thinly sliced pepperoni, coarsely chopped. Spread the mixture in the pan, which has been sprayed with cooking spray, using a spatula. Bake 15 minutes, then let sit for five minutes. This recipe makes 16 bars and should be served with warm marinara sauce.
