RECIPES: With holiday gatherings in full swing, we wanted to share some recipes from the Pennsylvania Grange News.
Southern Style Baked Corn, good for 8 to 10 servings. Ingredients: 1 16-ounce can of whole kernel corn, 1 16-ounce can cream-style corn, 2 eggs beaten, 1 8-ounce package corn bread mix, 1 cup sour cream, ½ cup melted butter cooled, salt and pepper to taste, grated parmesan cheese.
Mix undrained corn, cream style corn, eggs, corn bread mix and sour cream in bowl. Stir in cooled butter. Add salt and pepper. Spoon into 10X10 inch baking dish. Bake at 350 degrees for 30 minutes. Sprinkle with cheese. Bake for 15 minutes longer.
Here’s a recipe for slow cooker stuffing. We must admit to being fans of cooking in a slow cooker. Not only is it a time saver, but it also fills the house with wonderful scents.
This recipe yields 8 cups. Ingredients: 12 cups bread crumbs, 1 ½ teaspoon poultry seasoning, ½ teaspoon salt, ⅛ teaspoon pepper, 1 cup finely chopped onions, 1 cup finely chopped celery, ¼ cup butter, 2 tablespoons parsley flakes, 2 eggs well beaten, 1 1.2 cup chicken broth.
Place bread crumbs in large bowl. Mix seasoning, salt & pepper, sprinkle over crumbs. Melt butter in large skillet; add onion & celery. Saute until tender; stir in parsley. Pour over crumb mixture. Add eggs and broth, toss well. Spoon into slow cooker. Cook, covered, on high for 1 hour, then stir. Reduce heat to low and cook 1 ½ to 2 hours until the liquid is absorbed.
How about a pumpkin roll for dessert? Ingredients: 3 eggs, 1 cup sugar, ½ teaspoon cinnamon, ¾ cup pumpkin, 1 teaspoon baking soda, ¾ cup flour, 1 cup chopped walnuts (optional), 8 ounces cream cheese, 2 tablespoons butter, 1 cup Cool Whip, 1 ½ teaspoon vanilla, 1 cup powdered sugar.
Mix first 6 ingredients. Grease and flour jelly roll pan lined with wax paper. Pour batter into pan. Top with walnuts. Bake 15 minutes at 375 degrees. Let cool in pan 5 to 10 minutes, then turn onto lint free dish towel dusted with powdered sugar. Roll up and let cool two hours. Mix cream cheese, butter, Cool Whip, vanilla and powdered sugar. Fill cake and roll up. Chill overnight. Sprinkle with powdered sugar, slice and serve.
